Holiday Petite Cheesecakes Recipe

  1. Beat cream cheese in a mixing bowl till light and fluffy.
  2. Gradually add in 3/4 c. sugar, beating well.
  3. Add in Large eggs, one at a time, beating well after each addition.
  4. Stir in lemon juice and 1 tsp.
  5. vanilla.
  6. Divide mix into 3 portions.
  7. Add in Grand Marnier to first portion; mix well.
  8. Add in 1/4 c. miniature morsels to second portion; mix well.
  9. Keep third portion plain.
  10. Place a vanilla wafer in each paper-lined muffin c.; spoon cream cheese mix over wafers, filling c. 3/4 full.
  11. (Keep flavors separate.)
  12. Bake at 375 degrees for 20 min.
  13. Combine lowfat sour cream, 3 Tbsp.
  14. sugar, and 1/2 tsp.
  15. vanilla; mix well.
  16. Place a heaping Tbsp.
  17. of lowfat sour cream mix over cheesecakes as soon as they are removed from oven.
  18. Spread mix to edges.
  19. Bake at 375 degrees for an additional 5 to 7 min, or possibly till topping is set.
  20. Leave in muffin pans and chill overnight.
  21. Garnish with mandarin orange slices, cherries, miniature morsels, and kisses.
  22. Yield: 18 servings.
