Holiday Petite Cheesecakes Recipe
- 2 (8 ounce.) Packages cream cheese, softened
- 3/4 c. sugar
- 2 Large eggs
- 1 tbsp. lemon juice
- 1 teaspoon vanilla extract
- 1 1/2 teaspoon Grand Marnier or possibly other orange-flavored liqueur
- 1/4 c. semi-sweet chocolate miniature morsels
- 18 vanilla wafers
- 1 (16 ounce.) carton commercial lowfat sour cream
- 3 tbsp. sugar
- 1/2 teaspoon vanilla extract
- Mandarin orange slices
- Green and red maraschino cherries
- Semi-sweet chocolate miniature morsels
- Lowfat milk chocolate kisses
- Beat cream cheese in a mixing bowl till light and fluffy.
- Gradually add in 3/4 c. sugar, beating well.
- Add in Large eggs, one at a time, beating well after each addition.
- Stir in lemon juice and 1 tsp.
- vanilla.
- Divide mix into 3 portions.
- Add in Grand Marnier to first portion; mix well.
- Add in 1/4 c. miniature morsels to second portion; mix well.
- Keep third portion plain.
- Place a vanilla wafer in each paper-lined muffin c.; spoon cream cheese mix over wafers, filling c. 3/4 full.
- (Keep flavors separate.)
- Bake at 375 degrees for 20 min.
- Combine lowfat sour cream, 3 Tbsp.
- sugar, and 1/2 tsp.
- vanilla; mix well.
- Place a heaping Tbsp.
- of lowfat sour cream mix over cheesecakes as soon as they are removed from oven.
- Spread mix to edges.
- Bake at 375 degrees for an additional 5 to 7 min, or possibly till topping is set.
- Leave in muffin pans and chill overnight.
- Garnish with mandarin orange slices, cherries, miniature morsels, and kisses.
- Yield: 18 servings.
