Macaroni and Cheese
- 8 ounces whole wheat macaroni
- 2 tablespoons grapeseed oil
- 4 ounces Gruyere cheese, finely shredded
- 1/4 cup low-fat milk, hot
- Pinch of nutmeg, mixed with the milk
- Salt and pepper to taste
- Cook the pasta according to the package directions.
- Strain and return the pasta to the pan.
- Mix in the oil with the pasta.
- Add the Gruyere and flavored milk.
- Heat on low heat, mixing constantly, and cook until the cheese is melted.
- Remove from heat, season to taste, and serve immediately.
