Carrot Casserole

  1. In medium saucepan, steam carrots until tender; drain and set aside.
  2. In a medium saucepan, melt 2 tablespoons butter and saute onion until clear.
  3. Combine flour, milk and spices.
  4. Add to onion and heat until thickened, stirring constantly.
  5. In a small skillet, melt 3 tablespoons butter and add cracker crumbs, tossing to coat. In a 2-quart casserole, spread half on the carrots, then half the cheese; repeat.
  6. Pour sauce over all.
  7. Sprinkle with crumbs.
  8. Bake at 350u0b0 for 20 to 30 minutes.
