Vanilla Chip Cranberry Blondies
- 2 eggs
- 14 cup canola oil
- 14 cup unsweetened applesauce
- 1 12 teaspoons vanilla extract
- 1 13 cups all-purpose flour
- 23 cup brown sugar, packed
- 1 teaspoon baking powder
- 12 teaspoon salt
- 1 cup dried cranberries, divided
- 12 cup vanilla chocolate chips or 12 cup white chocolate chips
- 12 cup chopped pecans
- nonstick cooking spray
- In a large mixing bowl,beat the eggs, oil,applesauce and vanilla.
- Combine the flour, brown sugar,baking powder,and salt;stir into egg mixture until blended.
- Stir in 1/2 cup cranberries(batter will be thick).
- Spread into a 13x9 baking dish coated with nonstick cooking spray.
- Top with chips,pecans and remaining cranberries;gently press topping down.
- Bake at 350 for 15-20 minutes or until a toothpick inserted near the center comes out clean.
- Cool on a wire rack.
- Cut into bars.
