Southwest Chile Corn Bread

  1. Preheat the oven to 325 degrees.
  2. Coat a 9-inch-square baking pan with the cooking spray.
  3. Combine the flour, cornmeal, baking powder and salt in a medium bowl.
  4. Cream the butter and sugar in a large bowl.
  5. Beat in the eggs, one at a time, mixing well after each addition.
  6. Mix in the flour mixture, chiles, corn and Cheddar and Monterey Jack cheeses.
  7. Pour into the baking pan.
  8. Bake for 1 hour or until a wooden pick inserted in the center comes out clean.
  9. Yield: 6 servings.
