Chicken With Green Chiles and Cheese
- 4 boneless skinless chicken breasts
- 1 12 cups Mexican blend cheese
- 2 ounces rotel, with liquid
- 34 cup sour cream
- 14 cup breadcrumbs
- olive oil
- Preheat oven to 375 degrees.
- Mix cheese, Rotel and sour cream in a small bowl.
- Pour breadcrumbs into a shallow pan or dish.
- Flatten chicken breasts to approximately 1/4 inch thickness.
- Place 1/4 of cheese mixture onto each chicken breast, starting with small end, roll tight and secure with toothpicks.
- Dredge each roll in breadcrumbs.
- Place in baking dish and drizzle with olive oil.
- Bake, uncovered, for 35 to 40 minutes or until chicken is no longer pink and starts to brown.
- If prefered, sprinkle with more cheese and broil for 3 to 5 minutes until cheese is bubbly.
- Serve with salsa, sour cream, cheese -- Enjoy!
