Chicken With Green Chiles and Cheese

  1. Preheat oven to 375 degrees.
  2. Mix cheese, Rotel and sour cream in a small bowl.
  3. Pour breadcrumbs into a shallow pan or dish.
  4. Flatten chicken breasts to approximately 1/4 inch thickness.
  5. Place 1/4 of cheese mixture onto each chicken breast, starting with small end, roll tight and secure with toothpicks.
  6. Dredge each roll in breadcrumbs.
  7. Place in baking dish and drizzle with olive oil.
  8. Bake, uncovered, for 35 to 40 minutes or until chicken is no longer pink and starts to brown.
  9. If prefered, sprinkle with more cheese and broil for 3 to 5 minutes until cheese is bubbly.
  10. Serve with salsa, sour cream, cheese -- Enjoy!
