Carrot Celebration Cake
- 1/2 c. sugar
- 1 c. brown sugar, up to 2 c. max
- 2 1/2 to 3 c. flour (1 1/2 c. white, 1 1/2 c. wheat)
- 2 tsp. baking soda
- 2 tsp. baking powder
- 1 tsp. salt or non salt substitutes
- 3 Tbsp. milk
- 1 c. nut pieces (optional) my favorite is pecan chips
- 3 tsp. cinnamon
- 1/2 tsp. allspice
- 1 tsp. nutmeg
- 1/4 tsp. ground cloves
- 1 c. minced raisins
- 4 eggs
- 1 1/2 c. canola oil
- 2 tsp. vanilla
- 3 to 4 c. grated carrots
- 1/2 c. crushed pineapple (optional)
- In a bowl mix sugar, brown sugar, flours, baking soda, baking powder, salt or substitute, cinnamon, allspice, nutmeg, cloves and reserve.
- In a blender/food processor mince raisins then add to processor the canola oil, eggs, vanilla and milk.
- Blend at pulse to smooth.
- Combine that mix to grated carrots, pineapple and nut pieces.
- Mix until blended.
- Divide into 3 greased and floured 8 inch or 9 inch round pans.
- Bake at 325u0b0 for 40 to 70 minutes until knife inserted in middle comes out without any moisture.
