BBQ Chicken Quinoa Stuffed Avocado
- 2 cups Cooked Quinoa
- 2 cups Shredded Chicken (I Used A Rotisserie)
- 1 cup Corn
- 1 can (15 Oz. Size) Pinto Beans, Drained And Rinsed
- 1/2 cups Shredded Cheddar Cheese
- 3/4 cups Barbecue Sauce
- 3 whole Scallions, Chopped
- Salt And Pepper
- 2 whole Avocados
- In a large bow combine quinoa, chicken, corn, pinto beans, cheese, barbecue sauce and scallions and stir together.
- Season with salt and pepper.
- Slice avocados in half lengthwise and remove pit.
- Scoop out some of the avocado, leaving about 1/2 inch inside the shell.
- Add scooped out avocado to quinoa and chicken mixture and mix together.
- Spoon mixture into avocado halves.
