Brown Sugar (Dark Karo) Peanut Brittle

  1. Butter large cookie sheet and sides of 3-quart saucepan.
  2. In saucepan, combine sugar, brown sugar or dark Karo, corn syrup, water, butter or margarine and salt.
  3. Bring to boil, stirring to dissolve sugar.
  4. Clip candy thermometer to side of pan.
  5. Cook over medium heat with gentle boil to 275u0b0 (syrup turns a deep golden color), stirring constantly.
  6. Stir in peanuts; continue cooking, stirring often until 295u0b0.
  7. Remove from heat; quickly stir in baking soda.
  8. Immediately pour hot mixture onto buttered cookie sheet.
  9. If desired, pull with forks to stretch thin; cool.
  10. Break into pieces.
  11. Makes about 2 1/4 pounds of candy.
