Tropical Dip

  1. In small bowl, mix yogurt, coconut, pineapple and brown sugar.
  2. Serve dip immediately with fruit and gingersnaps, or cover and refrigerate at least 1 hour.
  3. *To toast coconut, sprinkle in ungreased heavy skillet.
  4. Cook over medium-low heat 6 to 14 minutes, stirring frequently until browning begins, then stirring constantly until golden brown.
