Mild Okra Fritters
- 1 quart canned okra
- salt, to taste
- pepper, to taste
- 2 eggs
- 2 teaspoons baking powder
- flour
- Boil okra; strain off water and mash.
- Season with salt and pepper, beat in eggs, baking powder, and enough flour to make a stiff batter.
- Drop a couple of tablespoonful at a time in deep fat fryer and fry till done.
- Appox.
- two minutes.
