Chocolate Cherry Melts
- 1 pkg. (225 g) Baker's Semi-Sweet Chocolate, chopped
- 1 cup butter or margarine
- 2 eggs
- 1/4 cup granulated sugar
- 3 Tbsp. brandy or rum
- 1/2 cup glazed cherries, chopped
- 30 Nilla Vanilla Wafers, coarsley chopped
- 1/2 cup nuts, chopped
- IN heavy saucepan, carefully melt chocolate and butter over low heat.
- Beat eggs until thick, about 8 minutes.
- Gradually add sugar.
- Beat in chocolate and brandy.
- Fold in chopped cherries, crushed wafers and nuts.
- Spoon into small individual paper cups.
- Refrigerate until firm, about 1 hour.
- If desired, garnish with whipped cream and additional cherries.
- SERVE chilled.
