Velvet Crepes
- 450 g Velveeta Process Cheese Product, cut up (about 3 cups)
- 3/4 cup milk
- 1-1/2 cups chopped cooked chicken Whole Foods 1 lb For $3.99 thru 02/09
- 1-1/2 cups sliced mushrooms
- 1/2 cup each: chopped green onions and red peppers
- 12 crepes (8 inch)
- 1/4 cup Kraft 100% Parmesan Grated Cheese
- Preheat oven to 350F.
- Place Velveeta in large microwaveable bowl.
- Stir in milk.
- Microwave on MEDIUM 3 min.
- or until Velveeta is completely melted and mixture is well blended, stirring every 1-1/2 min.
- Remove 3/4 cup of the sauce; set aside for later use.
- Add chicken and vegetables to remaining sauce; mix well.
- Spoon evenly onto crepes.
- Roll up.
- Place, seam-sides down, in greased 13x9-inch baking dish.
- Drizzle with reserved 3/4 cup sauce.
- Sprinkle with the Parmesan cheese.
- Bake 30 min.
