Best Blueberry Muffins Recipe
- 2 c. all purpose flour
- 1/4 teaspoon salt
- 4 teaspoon baking pwdr
- 3 tbsp. sugar
- 2 Large eggs, beaten
- 3/4 c. lowfat milk
- 1/4 c. melted butter
- 1 1/2 c. blueberries
- 3 tbsp. melted butter
- 1/3 c. sugar
- 1/2 teaspoon cinnamon
- Preheat oven to 400 degrees.
- Sift flour, salt, baking pwdr and 3 Tbsp.
- sugar.
- Quickly add in beaten Large eggs, lowfat milk and melted butter.
- Gently mix in blueberries that have been lightly dusted with flour.
- Spoon into greased muffin pans.
- Bake at 400 degrees for 20 to 25 min.
- Remove muffins from pan.
- Brush with remaining 3 Tbsp.
- butter.
- Combine 1/3 c. sugar and cinnamon and sprinkle over muffins.
- Serve hot.
- Serves 12.
