Crock Pot 5 Minute Bean & Bacon Soup

  1. Coat the inside of your crock pot with non-stick spray.
  2. Add all ingredients in order listed.
  3. Don't stir.
  4. Cover and cook on high 8 - 10 hours.
  5. Remove and discard the bay leaf.
  6. Remove about 1/2 cup of the beans (just beans, leave everything else in the pot).
  7. Using an immersion blender, puree the beans, vegetables and bacon.
  8. Stir in the reserved beans.
  9. Serve with crusty bread.
