Chicken Imperial
- 1/2 c. margarine
- 2 tsp. Worcestershire sauce
- 1 tsp. curry powder
- 1 tsp. oregano
- 1/2 tsp. dry mustard
- 1/2 tsp. garlic powder
- 1/2 tsp. paprika
- 2 to 3 drops Tabasco sauce
- 1/2 c. dry sherry
- 1 (4 oz.) can mushrooms or 8 oz. fresh mushrooms, sliced
- 1 medium onion, sliced
- 2 1/2 to 3 lb. chicken parts or breasts
- salt
- Combine all ingredients, except chicken and salt, in saucepan and blend over medium heat for 2 to 5 minutes, until smooth.
- Salt chicken on both sides and place in an ungreased oblong pan, skin side down.
- Brush chicken generously with sauce, using about 3/4 of sauce.
- Cover and bake at 350u0b0 for 1 hour.
- Uncover, turn chicken and add the rest of the sauce and continue baking for 30 minutes or until tender.
- Yield: 4 servings.
