Roast Pork Stuffed with Caraway Seeds
- 3 lb. rolled loin of pork, boned
- 2 tbsp. caraway seed, toasted
- 3 tbsp. kosher salt
- 1 tsp. dried thyme
- 1 tsp. paprika
- 1/2 tsp. marjoram, dried
- 1/2 tsp. ground black pepper
- 4 cloves garlic, minced
- 2 tbsp. vegetable oil
- Preheat oven to 350F.
- Cut 3/4 inch slits in pork loin.
- Stuff caraway seeds & garlic into the slits.
- Mix in a small bowl the thyme, paprika, marjoram, salt and pepper to make a rub.
- Put the rub on the stuffed pork loin.
- Brown the pork loin in a large pan with the oil until browned about 5-7 minutes.
- Tranfer to a roasting pan and place in the hot oven for 1 hour and 45 minutes, or until a meat thermometer reads 165F.
