Hawaiian Chicken Satays
- 1 lb chicken breast
- 1 20 ounce can chunk pineapples
- 2 bell peppers
- 1 pineapple juice from the 20 ounce can.
- 2/3 cup brown sugar
- 2/3 cup apple cider vinegar
- 1/4 cup soy sauce
- Cut chicken into long strips and about 1/4 inch thick.
- Mix marinade ingredients and marinate chicken strips for 2 to 4 hour.
- Deseed and cut the bell pepper into large chunks.
- Soak wooden skewers in water for at least 1 hour.
- Thread the pineapples, bell pepper and chicken on to the skewers.
- (discard the marinade)
- Set up your grill for Direct Heating.
- Take a strip of heavy duty tin foil and fold it over to make a Grill Shield, to protect the handles of the skewers.
- Grill about 5 to 6 minutes, flip over and grill about 5 minutes more.
