Pat'S Special Pork Chops
- 4 to 6 (1/4 to 1/2-inch thick) center cut pork chops
- olive oil
- 1/2 c. finely chopped onion
- 1/2 c. finely chopped green pepper
- 2 large garlic cloves, minced
- 1 tsp. parsley flakes
- 1/4 tsp. whole oregano
- salt and pepper to taste
- 1 can herbed tomato sauce
- Coat skillet with olive oil.
- Lightly brown pork chops on both sides; remove from pan.
- Saute onion, pepper and minced garlic in skillet.
- Add additional olive oil if necessary.
- Return chops to skillet, spooning onion mixture over pork chops.
- Pour tomato sauce over chops.
- Fill tomato sauce can 1/2 to 3/4 full of water and pour over chops.
- Sprinkle salt, pepper and oregano over mixture.
- Gently stir mixture with fork.
- Bring to a gentle boil. Lower temperature to simmer and cover.
- Cook, covered, on low for 25 to 30 minutes.
