Pat'S Special Pork Chops

  1. Coat skillet with olive oil.
  2. Lightly brown pork chops on both sides; remove from pan.
  3. Saute onion, pepper and minced garlic in skillet.
  4. Add additional olive oil if necessary.
  5. Return chops to skillet, spooning onion mixture over pork chops.
  6. Pour tomato sauce over chops.
  7. Fill tomato sauce can 1/2 to 3/4 full of water and pour over chops.
  8. Sprinkle salt, pepper and oregano over mixture.
  9. Gently stir mixture with fork.
  10. Bring to a gentle boil. Lower temperature to simmer and cover.
  11. Cook, covered, on low for 25 to 30 minutes.
