Raspberry Coconut Squares

  1. Put flour,
  2. 1/2
  3. cup
  4. sugar into mixing bowl and blend. Cut in 1/2
  5. cup
  6. butter
  7. until fine particles.
  8. Add 1 lightly beaten egg and
  9. toss
  10. to
  11. moisten.
  12. With
  13. hands, work mixture until dough forms.
  14. Lightly
  15. flour
  16. hands
  17. and press dough on bottom of
  18. 13
  19. x 9-inch pan which
  20. has been lightly buttered. Spread a thin even coat of jam on the top.
  21. Cream together the 1/4
  22. cup
  23. softened butter
  24. with
  25. remaining
  26. 1 cup sugar.
  27. Add remaining 3
  28. eggs, 1 at a time and beating after each addition until
  29. light
  30. and
  31. creamy. Add
  32. coconut and mix well.
  33. Spread over jam.
  34. Bake
  35. at 350u0b0 for 30 to 35 minutes or until golden. Cool and cut into squares.
