Herbed Carrots
- 1 lb baby carrots
- 1 stick butter
- 1 tbsp brown sugar
- 1 tbsp dill; minced
- 1 tsp thyme; minced
- 1/2 bunch parsley; minced
- 1 pinch sugar
- 1 1/2 shallot; minced
- Cover carrots with cold water.
- Add a pinch of sugar.
- Boil until carrots brighten in color.
- Drain.
- Heat butter over medium heat until nearly browned.
- Add shallots and thyme.
- Sweat on medium-low heat until caramelized.
- Add carrots, parsley, dill, and brown sugar.
- Toss.
- Serve.
