Herbed Carrots

  1. Cover carrots with cold water.
  2. Add a pinch of sugar.
  3. Boil until carrots brighten in color.
  4. Drain.
  5. Heat butter over medium heat until nearly browned.
  6. Add shallots and thyme.
  7. Sweat on medium-low heat until caramelized.
  8. Add carrots, parsley, dill, and brown sugar.
  9. Toss.
  10. Serve.
