Matts Camping Ribs
- 2 pounds Beef Or Pork Ribs
- 13 cups Brown Sugar
- 1 teaspoon Chili Powder
- 1 teaspoon Salt
- 1/2 teaspoons Black Pepper
- 1 bottle Barbecue Sauce
- 1/4 cups Marmalade
- 2 whole Jalapenos
- 1 Tablespoon Worcestershire Sauce
- 1 teaspoon Hot Sauce
- Rub: Combine brown sugar, chili powder, salt, and pepper and apply as a rub to the ribs before cooking.
- Sauce: Mince jalapenos and combine with the remaining ingredients (except ribs, obviously) in a saucepan on medium heat.
- Allow sauce to simmer for about 8 minutes so all ingredients are well mixed.
- Grill ribs on medium heat, about 2 hours for beef ribs and about 1 hour for pork ribs.
- Apply sauce to ribs every 15 minutes.
- Serve the rest of the sauce with the ribs!
- You can prepare the rub and sauce ahead of time.
- When we went camping, Matt had the ribs with the rub on them in one container and the sauce in another so that he could cook them at the site!
