Left over roast beef breakfast burrito
- 1 roast beef
- 1/4 chopped onion
- 1 jalapeno
- 3 eggs
- 2 potatoes
- tsp salt
- dash ground black pepper
- dash garlic powder
- tsp tonys Creole seasoning
- 4 tortillas
- 4 slice cheese
- tbsp olive oil, extra virgin
- Peel potatoes wash and dice in small pieces.
- Wash jalapeno and cut into small pieces then make sure you also have the onion cut up into small pieces.
- Add the jalapeno, onion, roast beef and potatoes into a pan with olive oil then add all of your seasonings.
- Put heat on medium low and cover until potatoes are soft make sure you stir so it doesn't burn or stick.
- Whenpotatoes are done 30 minutes later add the eggs stir until eggs are done nice and fluffy.
- Heat tortillas then add your roast beef with potatoes and eggs add cheese if you desire.
- Also good served with salsa.
- Enjoy.

- You can add more jalapenos for heat or leave them out whatever you like.
