Raisin Bars(Diabetic Dessert)

  1. In a saucepan combine raisins and apple juice.
  2. Bring to boil and then cool.
  3. Mix together flour, baking soda, baking powder, cinnamon, nutmeg, cloves, egg and vegetable oil.
  4. Add raisin mixture and blend thoroughly.
  5. Spread mixture into lightly oiled 8-inch square pan.
  6. Sprinkle on grated orange rind.
  7. Bake at 350u0b0 for 30 to 40 minutes.
  8. Cool in pan.
  9. Cut into 2-inch bars.
  10. These are delightful served plain but on special occasions can be topped as desired.
  11. Yield:
  12. 14 bars.
