Raisin Bars(Diabetic Dessert)
- 1 c. dark or golden raisins
- 1/2 c. unsweetened apple juice
- 1 c. whole wheat flour
- 1/2 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1/4 tsp. ground cloves
- 1 egg
- 2 Tbsp. vegetable oil
- grated orange rind
- In a saucepan combine raisins and apple juice.
- Bring to boil and then cool.
- Mix together flour, baking soda, baking powder, cinnamon, nutmeg, cloves, egg and vegetable oil.
- Add raisin mixture and blend thoroughly.
- Spread mixture into lightly oiled 8-inch square pan.
- Sprinkle on grated orange rind.
- Bake at 350u0b0 for 30 to 40 minutes.
- Cool in pan.
- Cut into 2-inch bars.
- These are delightful served plain but on special occasions can be topped as desired.
- Yield:
- 14 bars.
