Sausage & Cheese Mushrooms
- 4 pks. Large Mushrooms
- 1/2 lb. ground Sausage
- 6 Green Onions, sliced
- 1 pk. fresh Spinach, chopped
- 1/2 green Pepper, minced
- 1 1/2 cup Breadcrumbs
- 2 cups shredded Cheddar Cheese
- 1 tsp. each Salt and Pepper
- 1/2 cup Mayo
- 1/2 cup Parmesan cheese
- 1 shredded Cheddar cheese (optional)
- Wipe clean mushrooms, remove stems.
- Set aside.
- Brown sausage in fry pan.
- Place in bowl, reserve fat.
- Add vegs.
- to pan with fat and saute, 10 mins.
- Add to bowl.
- Let cool slightly.
- Add remaining ingredients except parm.
- cheese.
- Mix well.
- Stuff mushrooms and place in greased pan.
- Sprinkle with parm cheese (and extra cheddar).
- Bake 400 for 30 mins., until browned.
