Pineapple Macadamia Nut Bread
- 3/4 c. chopped Macadamia nuts
- 1 c. pineapple tidbits, drained (one 13 1/4 oz. can)
- 1 1/2 tsp. soda
- 3 Tbsp. soft shortening
- 1 c. (18 1/4 oz. can) hot crushed pineapple (undrained)
- 2 eggs
- 1 tsp. vanilla
- 1 c. sugar
- 2 c. sifted all-purpose flour
- Preheat oven to 350u0b0.
- Grease a 9 x 5-inch loaf pan.
- Using a fork, mix together nuts, drained pineapple tidbits, soda and salt. Add shortening and hot crushed pineapple.
- Mix all together well. Beat eggs; beat in vanilla and sugar.
- Stir in flour.
- Add pineapple mixture and stir just until well blended.
- Pour into prepared pan and bake 1 hour or until bread tests done.
- Cool in pan for 10 minutes.
- Bread may be served warm or cold.
- Makes 1 loaf.
