Cranberry Fruit Bread
- 2 c. chopped fresh or frozen cranberries
- 1 1/2 c. sugar
- 3 c. all-purpose flour
- 3/4 c. whole wheat cereal
- 3 tsp. baking powder
- 1 tsp. salt (optional)
- 1 tsp. cinnamon
- 1/2 tsp. baking soda
- 1/8 tsp. ground cloves
- 2 eggs, beaten
- 3/4 c. milk
- 1/4 c. vegetable oil
- 1/2 c. chopped walnuts
- Heat oven to 350u0b0.
- Grease 9 x 5 x 3-inch loaf pan.
- Combine cranberries and sugar; set aside.
- Stir together flour, cereal, baking powder, salt, cinnamon, baking soda and cloves.
- Combine eggs, milk and oil.
- Pour over dry ingredients.
- Add cranberries and nuts.
- Stir only until thoroughly moistened.
- Pour into pan(s).
- Bake 65 to 70 minutes (big pans) or until tester comes out clean.
- Cool before removing from pan.
