Chicken in Your Salad?
- 12 ounces fresh spinach or 1 head lettuce
- 3 hard-boiled eggs, diced
- 8 ounces cooked & diced boneless chicken breasts
- 6 ounces cherry tomatoes, diced
- 1 cup raw broccoli, diced
- 12 cup chickpeas
- 2 tablespoons balsamic vinegar
- 13 cup parmigeano parmigiano-reggiano cheese
- 12 cup chopped walnuts (optional)
- Place Spinach in a large Bowl.
- Add Chicken, Eggs, Tomatoes, and Broccoli.
- Sprinkle with the Vinegar and add the cheese and nuts.
- For a Variation next time try this with Turkey, Tuna or Salmon.
