Redeye Gravy and Ham

  1. Cut gashes in fat to keep ham from curling.
  2. Saute ham in butter in heavy (preferably iron) skillet over low heat until lightly browned, turning several times.
  3. Remove ham from skillet, and keep warm.
  4. Stir sugar into pan drippings, cook over low heat until sugar dissolves, stirring constantly.
  5. Add coffee, stirring well, simmer 5 minutes.
  6. Serve gravy over ham.
