Stuffed Green Cabbage

  1. Wash cabbage and cut out about an inch of the core, leaving enough so leaves stay together.
  2. Cook whole cabbage 5 minutes, covered in boiling salted water.
  3. Drain and cool.
  4. When cool enough to handle, turn back leaves.
  5. Saute sausage, ground beef and onion until lightly browned.
  6. Mix with rice and egg.
  7. When cool insert by spoonfuls between cabbage leaves.
  8. When all meat mixture has been used, place cabbage in large pot.
  9. Mix tomatoes and sage and pour around cabbage.
  10. Cover and simmer 20 minutes.
  11. Remove cabbage to serving platter.
  12. Mix yogurt with tomatoes and pour over cabbage. Season with salt and pepper to taste.
