Banana Orange Raisin Bread
- 2-1/2 cup all-purpose flour
- 3/4 cup wheat germ, any flavor
- 1/2 cup sugar
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt (optional)
- 3/4 cup raisins
- chopped dried figs
- 1 egg
- 2 egg whites
- 1/3 cup vegetable oil
- 2 ripe bananas, mashed
- 3/4 cup orange juice
- 2 tsp. grated orange peel
- 1 tsp. vanilla extract
- Preheat oven to 350&176;F. Grease a 9x5-inch loaf pan.
- Combine dry ingredients and wet ingredients in separate mixing bowls; combine the two mixtures and mix until moistened.
- Pour into pan and bake 1 hour to 1 hour 10 minutes, or until inserted toothpick comes out clean.
- Remove and allow to cool in pan for 10 minutes before serving.
