Jerk chicken (my way)
- 300 ml tomato sauce
- 150 ml water
- 3 tsp hot salsa
- 1 salt
- 1 pepper
- 1 parsley
- 2 clove garlic
- 1 large onion
- 2 large bell peppers
- 4 large tomatoes
- 1 tsp ginger
- 1 tsp curry
- 1 lime
- 100 grams pineaplle
- 1 large carrot
- 4 large chili peppers (without seeds)
- 50 grams brown sugar
- 1 basil
- 1 lime pepper
- 400 grams chicken leg's meat
- 250 grams rice
- 100 grams sour cream
- Peel and square pineapple and lime, set aside 100 grams.
- Thinly slice the vegetables, herbs and ginger.
- Preheat water in a large pot, add the rice and let it cook for half an hour.
- Cut the meat into slices
- Now preheat a large pan.
- Then stir in tomato sauce, water, herbs and all seasonings except sugar.
- Keep on stirring.
- Stir in all the vegetable slices, lime and pinapple squares, and sugar.
- Mix
- Preheat another pan, add some olive oil.
- As sone as the oil starts to blister, add the meat.
- It should be sauted for 4 minutes each side with salt and pepper.
- When the meat is ready, put it into the other pan and let cook for a few minutes
- Now the rice should be done.
- Serve everything with some sour cream.
