Oatmeal Chocolate Chip Cookies
- 1 3/4 c. sifted flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 tsp. baking soda
- 1 1/4 c. sugar
- 2 c. rolled oats
- 1/2 c. soft, solid shortening
- 6 Tbsp. molasses
- 1 tsp. vanilla
- 2 eggs
- 1 (6 oz.) pkg. chocolate chips
- Sift together flour, baking powder, salt, soda and sugar into a large bowl.
- Add eggs, shortening (at room temperature), molasses and vanilla.
- With a wooden spoon, stir until smooth about 1 1/2 minutes.
- Add chocolate chips and oatmeal; stir until it is blended evenly.
- Drop dough by heaping teaspoonfuls and 4 inches apart on a greased baking sheet.
- Bake in a preheated 325u0b0 oven for 12 to 15 minutes.
- Cool on a wire rack.
- Makes about 3 dozen cookies.
