Cheese Meatballs
- 1 lb. ground beef
- 1/2 c. grated sharp Cheddar cheese
- 1 tsp. salt
- dash of pepper
- 1/2 c. cracker crumbs
- 2 beaten eggs
- 1 tsp. chili pepper or chili powder
- 1 c. tomato soup (10 1/2 oz. condensed)
- 1/2 can water
- 1/2 tsp. chili powder
- 1 tsp. brown sugar
- Mix the cracker crumbs and eggs together first.
- Combine the ground beef, cheese, salt, pepper, crumb mixture and chili pepper or chili powder.
- Mixture will be stiff.
- Form into balls (size of golf balls).
- Roll in flour.
- Place in 2-quart casserole and cover with the sauce.
- Mix and bring to a boil the remaining ingredients. Pour over the meatballs.
- Bake, covered, at 350u0b0 for 1/2 hour and uncovered for 1/2 hour.
