Mama's Mad Meatloaf
- 3 slices stale bread
- 34 lb ground beef
- 12 lb ground pork
- 12 lb ground veal
- Lipton Onion Soup Mix
- 1 medium onion, chopped
- 4 garlic cloves, chopped
- 2 hard-boiled eggs, chopped
- 1 raw egg
- 1 teaspoon salt and pepper
- 2 tablespoons dried parsley
- 1 teaspoon dried thyme
- 1 teaspoon hot sauce (optional)
- 1 cup ketchup, divided
- Soak bread in milk, drain and crumble.
- In a large bowl, mix together all the ingredients but only 1/2 cup ketchup.
- Shape into meatloaf, place in a 9x13-inch pan, spread the rest of the ketchup on top, dome with foil and bake for 1 1/2 hours.
- Serving Suggestions: Cook about 1 pound of new potatoes with meatloaf, mashed potatoes, meatloaf sandwiches, corn on the cob, corn bread, mac n' cheese.
