Ginger Chicken Kabobs
- 1 lb. boneless, skinless chicken breast, cut into 1-1/2-inch cubes
- 1/4 cup fresh lemon juice
- 3 tbsp. olive oil
- 1 piece fresh ginger, peeled and grated
- 1 clove garlic, minced
- 1/2 tsp. black pepper
- 1/4 tsp. salt
- Wooden skewers, soaked in water
- Mix the salt, pepper, garlic, ginger, olive oil and lemon juice in a medium bowl.
- Put the cubed chicken in the lemon mixture and toss to blend.
- Cover with plastic wrap and chill for one hour to let the flavors blend.
- Set oven to broil.
- Thread the chicken onto wooden skewers.
- Toss out the remaining marinade.
- Cook the kabobs for about 11-13 minutes on each side or until the chicken is lightly brown and fully cooked.
- Serve hot or warm.
