Peanut Butter And Jam Muffins
- 2 c. flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- 2 eggs
- 1/4 c. milk
- 1/2 c. natural peanut butter
- 3/4 c. thawed, frozen, unsweetened apple juice
- 1/4 c. margarine
- 6 Tbsp. no-sugar strawberry fruit spread
- 1/2 c. chopped peanuts
- Combine dry ingredients in bowl; set aside.
- Beat eggs and peanut butter until smooth.
- Blend in apple juice concentrate, milk and margarine.
- Add to dry ingredients, mixing just until dry ingredients are moistened.
- Add peanuts.
- Spoon half of batter evenly into 12 greased muffin pans.
- Drop 1 1/2 teaspoons strawberry fruit spread into center of each.
- Cover with remaining batter.
- Bake at 350u0b0 for 18 minutes.
- Let cool 5 minutes.
- Remove from pan.
- Serve warm.
