Minestrone Soup
- 1 or 2 slices bacon
- 1/4 lb. ground beef
- 1 onion, chopped
- 1 or 2 stalks celery, sliced
- 2 carrots, sliced
- 1/4 small cabbage, chopped
- 1 small can tomatoes and juice (chop tomatoes)
- 1/2 tsp. salt
- 1 qt. water, divided
- 2 beef bouillon cubes
- 1 can kidney beans
- 1 c. frozen green peas
- 1 c. frozen corn
- 1/2 c. raw rice
- 1 clove garlic or garlic powder
- 1/16 tsp. pepper
- Chop bacon; place in pressure cooker and cook until almost brown, then drain almost all fat.
- Add ground beef and cook until no longer pink.
- Add onion, celery, carrots, cabbage, tomatoes and juice, 2 bouillon cubes, drained kidney beans, green peas, corn and raw rice.
- Add 3 cups water (if using 5-quart cooker, add all water), garlic, salt and pepper and stir.
- Bring pressure to 15 pounds and cook 15 minutes.
- Let pressure return to normal and remove cover.
- Add 1 cup or more water and heat.
- Serve.
