Rice Pudding
- 1 cup rice white rice, uncooked
- 4 cups milk
- 3/4 cups sugar
- 4 large eggs separated
- 2 teaspoon vanilla extract
- 1 x salt to taste
- Cook rice in large pot until all water is absorbed.
- Add milk and dash of salt; cook until thickens.
- Mix sugar, egg yolks, and vanilla; beat with a little of mixture; cook 1 minute.
- Add beaten egg whites.
- Pour in bowl and sprinkle top with cinnamon if needed.
