Carrot Cake
- 1 tsp. ground cinnamon
- 1 tsp. ground mace
- 1/2 tsp. salt
- 1 c. or 2 sticks margarine
- 2 c. sugar
- 4 eggs
- 1 1/2 c. finely grated carrots
- 2/3 c. pecans
- 2 1/2 c. sifted flour
- 3 tsp. baking powder
- 1/3 c. hot water
- 1/2 c. sugar
- 1/2 c. undiluted milk
- 2 egg yolks
- 1/4 c. butter
- 1 tsp. vanilla
- 1/2 c. coconut
- 1/2 c. pecans
- 1/2 c. dates
- Combine first 4 ingredients in a saucepan.
- Mix well.
- Stir and cook over medium heat until thickened (12 minutes); remove. Stir in rest of ingredients.
- Beat until spreading consistency. Frost with seven minute frosting or caramel frosting.
- This freezes well.
