Carrot Cake

  1. Combine first 4 ingredients in a saucepan.
  2. Mix well.
  3. Stir and cook over medium heat until thickened (12 minutes); remove. Stir in rest of ingredients.
  4. Beat until spreading consistency. Frost with seven minute frosting or caramel frosting.
  5. This freezes well.
