Creamy Poblano Rice with Corn

  1. Melt butter in large skillet on medium-low heat, stirring occasionally.
  2. Add onions and corn; cook 5 min.
  3. Add chiles; cook 1 min.
  4. Stir in cream cheese and milk; cook 2 to 3 min.
  5. or until heated through, stirring occasionally.
  6. Remove from heat.
  7. Stir in rice; top with cheese.
  8. Serve immediately.
