Strawberry & Snickerdoodle Skillet Cookie Sundaes

  1. Step 1: Preheat the grill to 350F.
  2. Lightly butter 4 well seasoned 5 to 6 inch cast iron skillets.
  3. Step 2: In a large bowl, cream together the butter and sugar until light and fluffy.
  4. Beat in the egg and vanilla until smooth.
  5. Step 3: In another bowl, sift together the flour, cream of tartar and baking soda.
  6. Stir the flour mix into the butter-sugar mixture until combined.
  7. Chill in the fridge for 10 to 15 minutes.
  8. Step 4: Combine the tablespoon of sugar with the cinnamon in a small bowl.
  9. Divide the dough into two and shape into balls.
  10. Roll in the cinnamon-sugar and press into 4 small 5 to 6 inch cast iron pans.
  11. Step 5: Cover pans with aluminum foil and place on the preheated grill.
  12. Close the lid.
  13. Grill for 10 minutes and remove the foil from the cookies.
  14. Grill for another 5 minutes.
  15. Remove cookies from the grill and let cool slightly.
  16. Step 6: Top the cookies with vanilla ice cream and fresh strawberries.
