Swiss Pie
- 1 c. finely crushed crackers
- 4 Tbsp. butter, melted
- 6 slices bacon, cooked, drained and crumbled
- 2 Tbsp. bacon drippings
- 1 c. chopped onion
- 8 oz. natural Swiss cheese, shredded (2 c.)
- 2 slightly beaten eggs
- 3/4 c. dairy sour cream
- 1/2 tsp. salt
- dash of pepper
- 2 oz. sharp process American cheese, shredded (1/2 c.)
- Preheat oven to 375u0b0.
- Combine cracker crumbs and melted butter.
- Press into bottom and sides of 8-inch pie plate.
- Cook bacon; drain and crumble.
- Pour off all but 2 tablespoons bacon drippings.
- Add chopped onion to drippings.
- Cook until tender. Add the bacon, onion, Swiss cheese, eggs, sour cream, salt and pepper.
- Pour into pie shell.
- Sprinkle with American cheese. Bake 25 to 30 minutes, until an inserted knife comes out clean. Let stand 5 to 10 minutes.
- Cut.
- Serves 4 to 6.
