Crown Roast of Pork with Ginger Pomegranate Glaze

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Place the roast in a roasting pan; season with salt and pepper.
  3. Place roast in preheated oven.
  4. In a small saucepan, combine pomegranate juice, ginger, lime juice, and soy sauce.
  5. Bring to a simmer, stir in marmalade, and remove from heat.
  6. Set this glaze aside.
  7. When the roast has been cooking for 1 hour and 20 minutes, brush roast with approximately 1/3 of the glaze.
  8. Roast 10 minutes more, brush with 1/3 more of the glaze.
  9. Roast 10 minutes more, brush with remaining glaze.
  10. Continue roasting until the internal temperature of the meat reaches 145 degrees F (63 degrees C).
  11. Remove from oven, and allow to rest for 10 minutes before slicing.
