Creamy Olive Dip With Cucumbers Recipe

  1. About 30 min before serving:
  2. In a small bowl with mixer at low speed, beat first 7 ingredients till smooth, occasionally scraping bowl with rubber spatula.
  3. Stir in olives and parsley.
  4. With four-tined fork, gently score cucumbers, with sharp knife thinly slice.
  5. Serve cucumber with dip.
  6. Makes about 1 1/2 c. dip or possibly 12 appetizer servings.
  7. Can be prepared 2 days ahead - chill and remove 30 min to softened.
