Lemon Pasta W Asparagus & Pine Nuts
- 1 lb asparagus
- 8 ounces penne or 8 ounces curly pasta
- 2 tablespoons olive oil
- 4 teaspoons lemon zest
- 14 cup lemon juice
- salt and pepper
- 1 cup chopped roasted red pepper
- 6 tablespoons pine nuts
- 6 -8 tablespoons parmesan cheese
- Steam asparagus till crisp yet tender (3-4 min).
- Cut into 1" lengths.
- Cook pasta toss with oil.
- Add asparagus and lemon juice, lemon zest, salt & pepper to taste, and red peppers.
- Add pine nuts just prior to serving.
