Ambrosia Tapioca Recipe

  1. Mix sugar, tapioca, salt, and orange juice in a 2-qt saucepan.
  2. Let stand 5 min.
  3. Heat to a boil over medium heat, stirring constantly.
  4. Cold slightly.
  5. Stir in orange sections.
  6. Chill at least 1 hour.
  7. Spoon tapioca into dessert dishes; sprinkle with coconut.
