Sauteed Zucchini
- 4 small zucchini, sliced (1nch round)
- 1 (8 ounce) package frozen cut okra
- 1 (8 ounce) packagefrozen artichokes
- 1 tablespoon instant minced garlic
- 2 tablespoons extra virgin olive oil
- 2 tablespoons soy sauce
- 1 tablespoon trader joe's black pepper sauce
- 12 cup marsala (sweet)
- 1 tablespoon barbecue sauce
- Saute garlic in olive oil over medium heat for 3 to 5 minutes.
- Add zucchini, then soy sauce, black pepper sauce, barbecue sauce, and Marsala.
- After a few minutes add okra.
- In a separate sauce pan boil frozen artichoke for about 5 minutes ( just to get soft).
- Add the artichoke, cover and simmer for about 20 minutes.
- Serve with rice or noodles.
