Angel Food and Grapefruit Cake
- 5 cups chopped grapefruit sections, undrained
- 1 (250 g) package instant vanilla pudding
- 2 cups thawed whipped topping
- 1 round angel food cake (10-inches in diameter)
- 12 grapefruit, sectioned
- 5 strawberries
- In a medium bowl, mix grapefruit sections and dry pudding mix.
- Gently stir in whipped topping.
- Cut cake horizontally into 3 layers.
- Place bottom layer, cut side up, on serving plate.
- Top with 1/3 of the pudding mixture.
- Repeat layers two times.
- Refrigerate for at least one hour.
- Top with grapefruit sections and strawberries just before serving.
- Store leftovers in refrigerator.
