Spicy Black Beans And Tomatoes
- 1 tsp. olive oil
- 1/2 c. chopped onion
- 2 cloves minced garlic
- 2 (14 1/2 oz.) cans tomatoes (whole)
- 2 Tbsp. chopped green chiles (can)
- 2 (15 oz.) cans black beans, rinsed and drained
- 1 Tbsp. chopped fresh cilantro
- 1/2 tsp. ground cumin
- 1/2 tsp. ground red pepper
- 1/4 tsp. chili powder
- Coat a large, nonstick skillet with cooking spray.
- Add olive oil.
- Place over medium high heat until hot.
- Add chopped onion and garlic.
- Saute until tender.
- Add the tomatoes and chiles. Reduce heat and cook, uncovered, for 6 to 8 minutes or until thick.
- Stir in beans and remaining ingredients.
- Cover and cook 5 minutes or until hot!
- Yum! Serve with rice.
